Mouth Party: 3 Vegetarian Dishes You’ll Love

“New year, new me”

Now let’s be honest, how many times have ya’ll said that, but instead proceeded to carry on the same unhealthy eating habits into the New Year?  I remember one year I committed to being a vegetarian and 2 weeks into the New Year, I quit. One of the issues I realized is that I was not fully educated on delicious vegetarian meals, which basically turned me off to the idea of being committed to this lifestyle, and for those who know, you must really be dedicated in order to be a vegetarian. 

No worries to those who suffer from this issue. Here are some hearty and delicious meals that will have you licking the bowl. 

 

Spicy Roasted Cauliflower

Ingredients 

 

2 (10-ounce) bags of fresh cauliflower florets

 

1 tablespoon olive oil

 

1/2 teaspoon crushed red pepper

 

1/4 teaspoon salt

 

1 ounce grated fresh Parmesan cheese

 

Freshly ground black pepper (optional)

 

Directions

 

Preheat oven to 500 degrees. 

Place cauliflower on a rimmed baking sheet and drizzle with olive oil. Sprinkle with red pepper and salt; toss gently and bake for 500 degrees for 12 minutes or until lightly browned. Sprinkle with cheese and black pepper, if desired. 

 

Sautéed Wild Mushrooms with Spinach

Ingredients 

 

1 tablespoon olive oil

 

2 garlic cloves, minced

 

4 (4-ounce) packages exotic mushroom

 

1 teaspoon chopped fresh thyme

 

4 teaspoons lower-sodium soy sauce

 

1/2 teaspoon freshly ground black pepper

 

5 ounces baby spinach

 

Directions

 

Heat oil in a large nonstick skillet over a medium-high heat, then add garlic; cook 30 seconds, stirring constantly. Add mushrooms; cook 9 minutes or until mushrooms are tender and lightly browned, stirring frequently. Add spinach and cook 2 minutes until wilted, stirring constantly. Add thyme, salt, and black pepper into the cooked ingredients and season to taste. 

 

 

Squash and Zucchini

Ingredients 

 

1 medium zucchini

 

1 yellow squash

 

2 tablespoons butter

 

1 tablespoon oregano

 

1/4 cup Parmesan cheese

 

Directions

 

Preheat oven to 350 degrees.

 

Slice squash and zucchini into 1/4 slices and toss in a bowl with melted butter and oregano. Spray the baking sheet with pan and arrange zucchini and squash. Season the vegetables with salt and pepper; then sprinkle Parmesan cheese on the baking sheet. Bake for 30 minutes, and your DONE.
